Earthy Fennel Soup with Insect Flour


You say you don’t like fennel? This soup, thickened with insect flour, will change your mind. It is so simple yet full of flavor. There are no mushrooms in this dish but you will swear there are! The combination of the fennel and Protein2050 Mealworm Flour is delicious, earthy and comforting.

Ingredients:

3 tablespoons butter
1/2 cup red onion, chopped
2 medium fennel bulbs, chopped (though outer ribs discarded first)
2 small to medium leeks, greens discarded, whites chopped
1 large yellow or Yukon potato, chopped
4 cups vegetable stock
Salt and pepper to taste

Chocolaty Chip Mealworm Cookies


These are as delicious as your tried, tested and true chipper cookies. Nothing fancy, nothing too healthy, except of course your Protein2050 Mealworm Flour and applesauce! For new Ento-friends, these will have them at ‘hello’.

Made with Protein2050 Mealworm Flour
Number of Servings: 24 cookies

Ingredients:

1/2 cup butter
1/2 cup brown sugar
1/2 cup organic white sugar or coconut sugar
1 egg
1/2 teaspoon vanilla
3 tablespoons applesauce
1 cup all purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 cup oats
1/2 cup chocolate chips

Directions:

Preheat oven to 375°F

In a large bowl, cream together butter, egg, sugars, vanilla and applesauce.

In a separate bowl, combine dry ingredients. whisk in Mealworm Flour. Add mixture to wet ingredients using a spatula to fold in. Add your chocolate chips while mixing, Do not over mix.

Using a teaspoon drops the batter onto parchment paper covered or greased cookie trays. Bake for 10 minutes at 375°F

Round up the troops, these nutty-flavored cookies go quick!

Dulce de Leche Caramel Cricket Crunch


This sweet treat will seal the deal for the “ento-cautious”. It takes one bowl for the transition of “thanks but no thanks” to scooping up crunchy sticky crickets with popcorn and asking for MORE please! A super fun party treat that can also be crunched up with dry-roasted mealworms!

Made with Protein2050 roasted crickets and/or mealworms
Number of Servings: 6

Ingredients:

1/2 cup honey
1/2 cup butter
1/4 cup Dulce de Leche caramel (regular caramel works just great too)
6 cups popcorn, already popped
1 cup roasted crickets

Directions:

Preheat oven to 350

Mix crickets with popcorn in a large bowl and set aside.

In a small saucepan melt the butter. Add honey and caramel and continue to cook for 1 minute while continuing to stir. Pour this sweet mixture over the popcorn and crickets and mix well.

Spread mixture out on a parchment covered cookie sheet and bake for 10-15 minutes at 350.

Remove from the oven and let cool slightly. Break up into smaller pieces so that everybody gets some! Can be served warm or cold, mealworms or no mealworms, the choice is all yours.

Black Bean Salad and Mixed Greens with Crispy Tortillas and Wax worms


So Fresh!! That’s what the foodies say with the very first bite, and the wax worms make it super crunchy! The main part of this salad can easily be made ahead of time. Feel free to let it sit in the refrigerator and marinate while you wait for lunch time to roll around. It is great for chip dipping and my kids love it on tortilla pizzas (minus the greens of course). This recipe says summer even if it’s winter.

2 cups black beans(canned(drained), or cooked and cooled)
1 cup roasted red peppers, diced
1/2 cup corn kernels,cooked
1/3 cup red onion, finely chopped
4 scallions, thinly sliced
1 jalapeno pepper, seeded, deveined and finely minced
(wear a glove to prevent stinging hands)
2 garlic cloves, finely minced
3 tablespoons fresh lime juice
2 tablespoons olive oil
